OS X Yosemite :: Don't Want To Use ICloud But Can't Make All Information To Sync Using WiFi

I have an iMac Retina OS X 10.10.1, an iPhone 5s IOS 8.1.1, and an iPad 2 IOS 8.1.1 

I would like to sync calendar, contacts, notes, reminders and email over wifi without using iCloud.  I would like this to be automatic, but can't make it work.  I've disabled iCloud on the both hand held devices, but the iMac tells me that iCloud is still working and that I can disable it using the hand held devices.  It doesn't work.
